Cantonese Fried Rice

This is a side dish using cooking rice. Serve to accompany meat and vegetables or as a complete meal.
Ingredients:
- 2 tbsps. oil
- 6 cups of pre-cooked steamed rice
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tbsp. soy sauce
- 1/4 lb. chicken breast, cubed
- 1/4 lb. small peeled shrimps
- 2 eggs, beaten, fried and cut into strips
- 2 tbsps. scallions or chive, chopped
- 1 cup cooked green peas
- 1/2 cup of ham, cubed
Preparation:
- Heat oil in pan or wok.
- Saute garlic, onions, chicken, ham, shrimp and soy sauce.
- Add rice, eggs, and top with peas, scallions.
- Serves 12.
