Cantonese Fried Rice

This is a side dish using cooking rice. Serve to accompany meat and vegetables or as a complete meal.

Ingredients:

  • 2 tbsps. oil
  • 6 cups of pre-cooked steamed rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp. soy sauce
  • 1/4 lb. chicken breast, cubed
  • 1/4 lb. small peeled shrimps
  • 2 eggs, beaten, fried and cut into strips
  • 2 tbsps. scallions or chive, chopped
  • 1 cup cooked green peas
  • 1/2 cup of ham, cubed

Preparation:

  1. Heat oil in pan or wok.
  2. Saute garlic, onions, chicken, ham, shrimp and soy sauce.
  3. Add rice, eggs, and top with peas, scallions.
  4. Serves 12.
