Stuffed Artichoke with Seafood

Ingredients:
  • one whole medium artichoke
  • 1/2 cup coconut milk
  • 1 tsp. red curry paste
  • one egg
  • 1/2 tsp. all-purpose flour
  • 2 tsps. fish sauce
  • 1 tsp. sugar
  • 2 cleaned medium shrimp coarsely chopped
  • 2 cleaned mussels
  • 2 scallops
  • 2 thin slices cleaned squid
  • 4 Thai sweet basil leaves

Preparation:

  1. Cut the stem of the artichoke evenly so that it can sit up straight by itself.
  2. Trim out any unwanted leaves, then boil the artichoke for 20 minutes. Let cool, then scoop out the hairy part with a small spoon. Put it aside.
  3. In a medium bowl, add coconut milk and red curry paste, beat well. Next add eggs, fish sauce and sugar. Mix well. Finally add all other ingredients and lightly toss.
  4. Scoop mixture and place into the artichoke and steam for 30 minutes. This can be served as an appetizer or side dish.
